This cinnamon streusel banana bread is hearty, moist, fluffy and can be made GF, DF, and vegan, if desired.

Instructions
- Preheat the oven to 350°F. Lightly spray a loaf pan with oil and line with parchment paper.
- In a small bowl, add the cinnamon and sugar and mix
- In a large mixing bowl, combine dry ingredients and mix.
- In a separate bowl, mash bananas then add eggs, melted coconut oil, and vanilla paste and mix well. Add to large bowl and mix.
- Pour a ⅓ of the batter to the loaf tin. Sprinkle cinnamon sugar mixture evenly. Top with remaining ⅔ batter. Top with remaining cinnamon and sugar.
- Bake for 20 minutes. Remove from oven and quickly add topping and sliced bananas and replace back in oven for a further 30 minutes. Check after 25 minutes.
- Once a skewer comes out clean, remove from the oven.
- Allow the bread to cool in the pan completely, before slicing and serving.
