  1. In a saucepan, cook onion in butter until tender. Add squash, ginger, and broth. Cook over medium heat for 12-15 minutes or until squash is very tender.
  2. Use an immersion blend or put in blender to purée.
  3. Add salt and pepper, to taste.
  4. When ready to serve, return to pot and stir in cream or milk.
  5. Gently reheat but do not boil.
