Cupcakes
- Preheat oven to 320°F.
- Place butter, sugar and vanilla in electric mixer and beat 10-12 minutes or until light and creamy. Gradually add the eggs and beat well.
- Add the flour, baking powder, cocoa and milk and beat until just combined.
- Fold through melted chocolate.
- Spoon into 12 muffin tins line with cupcake papers.
- Bake 18-20 minutes or until cooked when tested with a skewer. Cool on wire racks.
Buttercream
- Beat butter 6-8 minutes or until pale and creamy. Add remaining ingredients and beat for further 6-8 minutes or until light and fluffy.
