Ground Bison (or beef!) Slow-Cooker Chili

To me, slow-cooker chili is one of those all-time comfort food classics. It may be my Midwest roots but that chili was always a staple at Halloween or block parties when I was grown up,, and I continue hat traction every Halloween today. Bison is lean and full of flavour, and this recipe is a great alternative to a traditional beef chili. This is a perfect dish to prep ahead of time and then let cook all day in the slow cooker.

- Turn your slow cooker to the low setting.
- Heat the olive oil in. large skillet over medium heat. Add the onion and bell pepper, and sauté for 5 minutes. Add the garlic and sauté for an additional minute, until fragrant. Transfer the onion/pepper mixture to the slow cooker.
- Return the skilled to medium-high heat. Add the bison and cook, stirring occasionally, until it is browned, 5 minutes. Add the bison to the slow cooker.
- Store the fire-roasted tomatoes, tomato paste, beef stock, Worcestershire sauce, chili powder, cumin, paprika, and coriander into the mixture in the slow cooker. Season with salt and pepper. cover the slow cooker and cook on low setting for 4 hours.
- Add both beans to the mixture in the slow cooker and stir to combine. Let the chili cook, still on the low setting, for 1 more hour.
- To serve, spoon the chili into serving bowls and garnish with the scallions.
