Definitely not a hippie but will happily eat this one all the time.

This bowl is a comfort when I"m low on energy and time. When we have any leftover grain - jasmine rice, quinoa, brown rice - we just reheat it (that is, stir-fry it) and add whatever is hanging around in our fridge and voilà - Hippie Bowl becomes Busy Mom bowl!

  1. Combine all of the ingredients in a large stainless-steel bowl. Top with the dressing, and using tongs, toss until well mixed and dressed.

ANTHOLOGY NOTES

I've found that there's more than enough tofu for two of us and dressing. Just double up the rest and you have a big dinner/lunch.

Tamari Dressing

Tamari Dressing

The Tamari dressing is adored by all that come to our restaurant. Its taste is unique and unparalleled. Creamy perfection with a nutty and tangy flavor that combines well with all salads.

Ingredients

  1. In a blender, combine the vinegar, tamari, garlic, and nutritional yeast. Process on medium-high speed until smooth and well combined, 20 - 30 seconds. Stop the blender and scrape down the sides of the jar with a spatula as needed.
  2. With the blender running on low speed, slowly drizzle in the olive oil until the dressing is emulsified and thickened, about 30 seconds. Season to taste with the salt and pepper. Transfer the dressing to an airtight container and refrigerate until ready to use.

Notes

This dressing will keep, refrigerated, for up to 7 days.

Spicy Tofu

Spicy Tofu

  1. Drain and press the tofu.
  2. Dice the tofu into 1/2 inch cubes and transfer to a large bowl.
  3. Combine the tamari, togarashi, and sesame oil with tofu cubes. Transfer to a zipolcok bag or airtight container and refrigerate minimum of 2 hours.
  4. pat the tofu cubes dry with paper towel, then heat the avocado oil in a frying pan over medium heat.
  5. Fry the tofu cubes, stirring regularly, until browned on all sides, 4 to 5 minutes.

Notes

The tofu cubes will keep refrigerated, in an airtight container for up to 5 days.
