  1. POUND chicken breasts with meat pounder (or rolling pin) to a uniform thickness.
  2. Dredge chicken breasts lightly in flour, shaking off excess.
  3. In a large pan, sauté over medium heat, melt butter and oil until it sizzles.
  4. Add chicken and sauté, turning once or twice, until cooked through and juices run clean. Remove chicken and set aside.
  5. Whisk in flour and cook for 1 minutes until the mixture boils.
  6. Add lemon juice to the chicken broth and whisk into pan. Reduce heat to a simmer.
  7. Return chicken to pan to heat through, thickening sauce to desired consistency. Season to taste with salt and pepper.
  8. Serve the chicken on a bed of rice and spoon the sauce over the chicken. Garnish with chopped parsley and lemon slices.
