This is an everyday muffin mixture that's easy to make. And it's made often. Kids love the extra chocolate chips as an added treat.

  1. Preheat oven to 350°F.
  2. Mix the flour, salt, sugar, baking powder, and cocoa together. In a separate bowl, whisk vanilla, milk, butter and eggs until smooth.
  3. Combine dry to wet and stir until just mixed.
  4. Using an ice cream scoop (this is a thicker batter), spoon into greased or parchment lined muffin trays and bake for 15-20 minutes (mine tend to take 18 minutes and then I let them sit in the tray for another 5 once removed from oven), or until risen.

Notes

I find using a scale is so much more precise when baking. This is from convertunits.com:

Measuring your flour by weight (240 grams instead of 1 7/8 cups) will provide much more accurate results in cooking. Please note that converting 240 grams of flour to cups can vary slightly by room temperature, quality of flour etc. But by using 240 grams of flour instead of 1 7/8 cups, you can't go wrong.

This 240 grams flour to cups conversion is based on 1 cup of all purpose flour equals 125 grams.
