The first time I tasted this was in LA, where it is often served with drinks before dinner. I ate so much of it that I struggled to eat dinner (only a little struggle, mind you). I've added spinach because I like it and because it gives a vibrant green colour you can also add Tabasco and/or Worcestershire sauce for a bit of spice and tang.

Instructions

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Put all the ingredients, except the salt, into a food processor and whizz until blended and smooth. Add a pinch of salt to taste.
  3. Pour the dip into a shallow baking dish and bake for about 15 minutes, until hot all the way through.
  4. Serve hot with Pitta Chips, plain pitta bread or tortilla chips.
