No added sugar and sweetened with dates, these maple beans are a chilly night staple in the Anthology house. Syrupy, smokey and thick, it's perfect to pile on top of a slice of crusty bread.

Ingredients

Instructions

  1. Preheat the oven to 350°F.
  2. In a large Dutch oven, heat oil over medium heat. Add the onion and bacon, stir to coat with the oil, and sauté for 10-15 minutes, until softened and bacon begins to crisp a tad.
  3. Add the dates, maple syrup, vinegar, tomato paste, molasses, mustard, dry mustard, smoked paprika, and liquid smoke to the onions and bacon and stir until combined.
  4. Cover slightly and bring the mixture to a simmer. Simmer for a couple of minutes. Stir in the drained beans and season the mixture with salt and pepper.
  5. Cover the pot with lid and move beans to the oven. Bake the beans for 20 minutes. Remove and give a mix. Cover again and bake for another 15 minutes.
  6. Stir, then carefully taste and add more liquid smoke vinegar, mustard or dried mustard if too sweet. Alternatively; maple syrup if too smokey. And of course, salt or pepper, to taste.
  7. Serve with a green salad or crusty bread.

Notes

*Two 14 ounce cans of navy beans are equivalent to 3 heaping cups total cooked navy beans, if you prefer to cooke them from scratch.
