Serve straight from the oven or prep ahead, this healthy baked breakfast apple crisp is perfect for busy mornings. As a bonus, it is packed with nourishing foods like apples, chia and coconut flour

  1. Preheat the oven to 375°F. Lightly grease an 9" by 13" inch baking dish.
  2. In a large bowl, stir together the oats, almonds, coconut flour, maple syrup, melted coconut oil, shredded coconut, (if using), cinnamon, brown sugar and sea salt until thoroughly mixed.
  3. Set aside.
Filling
  1. Cut apples in to bite sized chunks. Place apples in a large bowl and pour lemon juice over top to cover. Sprinkle the cornstarch on top. Toss until coated. Stir in the sugar, chia seeds, and cinnamon. Pour the apple mixture into the prepared dish and smooth it out evenly.
  2. Scatter the crisp mixture all over the apple filing in an even layer.
  3. Cover the dish with foil. Poke a few air holes in the foil to allow some of the steam to escape. Bake approximately 50 minutes, until the apples are just fork tender - you don't want them to be too mushy.
  4. Remove the foil and return dish to bake for another 10 to 15 minutes more, until the topping is golden and crisp.
