New Potato Nugget Toss with Sun-Dried Tomato Vinaigrette

This is a richly flavored sun dried tomato dressing that’s perfect to toss baby potatoes in.
Ingredients
Instructions
- Scrub potatoes. Boil 12-15 minutes or until tender, drain, reserving 1 tbsp potato water.
- Whisk together vinegar, mustard, garlic and reserved potato water in small bowl. Whisk in oil, sun-dried tomatoes, slat and pepper.
- In large bowl, toss warm potatoes, vinaigrette and ¼ cup basil. Taste and adjust seasoning.
- Transfer to platter or large serving bowl. Top with cheese and remaining basil.
