Chocolate Loaf

This is not your usual chocolate loaf in that the almond flour helps provide a denser, more loaf-like rather than a cake.

For a textural change, add toasted walnuts or pecans.

  1. Preheat oven to 325°F.
  2. Lightly grease and line a large loaf pan with parchment paper.
  3. Beat butter and sugar in a mixer until light and fluffy. Add 3 eggs, one at a time, until fully incorporated. Slowly pour milk and mix until butter mixture is smooth.
  4. In another bowl, combine flour, almond flour, baking powder, salt, and cocoa powder. Give a quick stir and add to liquids.
  5. Beat until smooth but make sure to not over mix. It is a fairly thick mixture.
  6. Stir in chocolate chips.
  7. Using a spatula, transfer batter to loaf pan. Bake for 50 minutes or until toothpick comes out clean.
  8. Let sit in loaf pan for at least 5 minute before lifting parchment paper to transfer loaf to a cooling rack.
